H&M for Fall

Some people have their Forever 21 but-I-still-look-like-a-teenager guilty pleasures, mine is H&M.

This stuff is terrible quality, fit to some bizarrely proportioned, at best, dress-maker dolls and barely makes it through a season.  Which is why, for less than $150, I get a whole new wardrobe seasonally.  Just once.  That's all I can handle of the digging, intolerable teeny-bopper shoppers and extreme heat (seriously, does no H&M believe in A/C?  It's so weird!).

Here were my latest finds:

I'm on my way to Charlotteslville, VA to celebrate one of my bridesmaid's own weddings!  Can't wait to see Fiona and Kareem (my very own Jasmine and Aladdin) tie the knot in some magic carpet, Iranian-meets-Chinese cultural excitment!

My First Link-Up: Someday I Will...

First let's get this party started with a good 'ole WTF.  WTF is a Link Up?

Link-Up: (LU?) - when someone much more clever than I comes up with a super snazztastic theme and those of us less clever Bloggerinas copy the idea and make it their own.  A blog theme!  I have heard about these, seen these online before, and never been as thoroughly amused as the one I found today, thanks to Two Thirds Hazel whose own post legit made me LOL and The Daily Tay, who made the thing up.
 
Has anyone else noticed that LOL is coming back?  Similar note: my future cousin-in-law sent me a Snapchat of an AOL CD she received in the mail today?  There's a lot of pop culture happening in this sentence...
 
This one in particular is kind of like one of those email chains we all used to go bananas for, where you answer 43.2 nearly embarrassing, or faux-enlightening questions in an email and then forward it around to as many addresses as you can find, hoping someone, SOMEONE will respond back that they, in fact, have a crush on you!  Romance, ladies and gents.  Middle school romance.

Without further a do...
 
1.  Someday I will... get out of bed without perusing every Ruelala, Gilt and One King's Lane app looking for a "steal" on something I already have, cannot afford and do not need.  My name has changed, and so must the Jew-itis.
 
2.  Someday I will... follow through on my sometimes-morning declaration that today! should be a sober day.

3.  Someday I will... look up the meaning of denial and investigate that spa Lindsay Lohan keeps hanging out at...



4.  Someday I will... have enough shoes.

 

 
5.  Someday I will... admit to the Hubs how horribly I've failed #4 and divulge my secret shoe closet behind my secret trap door accessed only through the laundry room via a size 5 shoe laser identifier thingamabob.

6.  Someday I will... stop acting horrified and surprised when my knees start to kill after I've been sitting with my legs tucked up underneath me for more than 20 minutes.  Mom warned me about this decades ago.

7.  Someday I will... embrace the Hubs' smelliness (in his terms "respect the scent")...  False.  What a crock.  A gross ass crock.

8. Someday I will... shower more often than when it just becomes "obvious."

9. Someday I will... stop cracking up every time anyone says the word duty... you know you can't help it either!



10. Someday I will... not have to follow a salty snack with a sweet one... then a salty one... then a sweet one...

11. Someday I will... stop collecting girl friends who need saving and start collecting girl friends who just need girl friends (that was a deep one).

12. Someday I will... spell friend without having to say "fri-end" in my head.

A Half-Ass Pantry Recipe: Chipotle Chicken Soup

It has come to my attention, in the form of cracking myself up, that I am tremendously more entertaining in type than in person and furthermore, that that humor is amplified with the help of some big kid grape juice.

So I've started blogging while cooking.  And cooking always comes with grape juice.  As I mentioned, I've stopped freaking out and moving on to the next recipe just because I'm missing an ingredient.  It definitely goes against my OCD rules-were-made-for-a-reason typical mentality, and I'm kind of starting to dig it.  Have the hubs to thank for this as he has certainly taught me that things don't always go according to plan.  ;)

First up: 
 Chipotle Chicken Soup

Original Ingredients:

1 can chipotle chiles in adobo sauce
2 tablespoons unsalted butter
1 poblano pepper, seeded and finely chopped
1 red bell pepper, seeded and finely chopped
1 teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon dried thyme
6 cloves garlic, minced
2 tablespoons all-purpose flour
3 cups whole milk
2 cups chicken stock
6 small red potatoes, peeled and diced small
4 ounces Monterey Jack cheese, shredded (about 1 cup)
4 ounces Cheddar cheese, shredded (about 1 cup)
2 cups diced, cooked chicken
1 (30-ounce) can sweet corn, drained
1 (15-ounce) can cream-style corn
1 cup crushed tortilla chips
Juice from 1 lime (about 2 tablespoons)
Chopped cilantro, to garnish (optional)

My Subs:

  • Yellow bell pepper instead of red - I think they're sweeter and that's that.  Nobody likes green though, don't go there.
  • Cheap dried italian herbs - nobody has dried oregano and dried thyme separately - what a ridiculous waste of space that would be.
  • 15-oz can of sweet corn instead of 30-oz, because I can't read
  • Heavy cream and more chicken stock for whole milk - we'll get there in a minute

Directions:
1. Remove one chile from the can of chiles and mince it. Remove 1 teaspoon of the adobo sauce and set it aside to be used later. You can save the remaining chiles and sauce for another use (or you can just chuck them because it's $1.29 and freezer space is worth more than a creepy baggy of chiles.)

2. Melt the butter in a stock pot over medium heat.  Add all the fun peppers, cumin, dried herbs, and sauté for 5 to 7 minutes, or until the peppers become soft. Add the garlic, stir and cook for an additional 30 seconds, or until fragrant. 
You know the kitchen sink, cheap-o Italian herbs?  I added bunches.  Hubster doesn't like herbs.  But guess what, Hubster refuses to read my blog... in go big bunches. 

3. Stir in the flour with a wooden spoon and cook for 1 minute, or until there is no longer any visible raw flour. Slowly stir in the milk and chicken broth, scraping up any bits from the bottom of the pan as you stir.

I'm ready to prep the milk and chicken stock by combining...

What the?  Grocery store shopping fail.  Although the 1% was clearly my attempt at being healthier than the whole milk, this cannot be delicious.  It called for 3 cups whole milk and 2 cups chicken stock. Substitution: 1/2 cupish chunkier milk (heavy cream) and 4 cups chicken stock.  Done.


4. Add the potatoes, bring the mixture to a boil, then reduce the heat to low and simmer for 10 to 15 minutes, or until the potatoes are tender and can be easily pierced with a knife.
 
5. Add the shredded cheeses a handful at a time, stirring after each addition until the cheese is completely melted.

6. Finally, stir in the chicken, both cans of corn, lime juice and the reserved 1 teaspoon of adobo sauce.  Cover and cook for an additional 10 minutes, or until the soup is completely heated through.  Serve immediately.

Somebody forgot that the chicken probably needed to be cooked first...  If this unfortunate timing debacle happens to you, just lower the heat on the soup and stall 15 min while you panic chop and saute chicken breasts in a little EVOO (that's right, I get rights to stupid sayings like that by nature of my name...)


7.  Doctor it up with hot sauce, extra lime juice, tortilla chips (or Fritos... teehee), cilantro - whatever your inner Mexican heart desires.
 
Delicious.  It was actually awesome with the thinner broth due to excess chicken stock, I think.  And it kept well in the fridge for the next day.  I froze a bunch too, because this recipe makes about 8-10 servings.  I realize that picture looks like porridge, but I swear it was great.

7 Month Hiatus No More!

Alright.  There were admittedly some things that went down since last I wrote... 7 months ago... whoops:

  • Plethora mental breakdowns and planning near-disasters due to impending wedding that don't need to be detailed.
  • Got muhrried surrounded by our family and friends and had the most fun reception ever.
  • Went on the most amazing honeymoon ever with the hubster.
  • Started traveling to New York for work 5 days a week.
  • Had a few "Devil Wears Prada" moments (the frantic running around bits, not the Chanel boots bits.)
  • Started working 18 hour days regularly (read: another excuse for not blogging).
  • Found out we're moving to Cincinnati with 8 weeks notice.
  • Located Cincinnati on a map...
  • Decided to sell home after living in it for <15 months.
  • Started Pinning many more winter-approved items.
  • Determined blogging was a a good idea again.

So here I am again, back on the wagon!

Nevermind the half a year that disappeared with no comment, I barely knew what was going on either.

For the record, let me just say, the "Wait, are you the real Rachel Ray?" is just as old and annoying as you'd expect.  I do think I got a magical Delta upgrade though... so... worth it! 

I have, however, had time to cook more frequently since the current project I am on took a turn for the work-at-home zone.  That and my new attitude of "you can't even TRY to divorce me over a crap meal!" means I have been playing with new recipes and learning new lessons on substituting normal person ingredients for weird stuff the real Rachael Ray may have on hand... like zucchini blossoms.  Who does that?
